Ingredients & Directions


4 c Stale bread; cubed
2 c Milk; warmed
1 c Apple juice
3 lg Eggs
1/2 c Sugar
1/2 c Pineapple chunks in juice;
-crushed
1/4 c Dates; chopped
1/4 c Pecans; chopped
2 tb Orange marmalade
1 ts Vanilla extract
1/2 ts Ground nutmeg
1/4 ts Salt
1/4 ts Lemon zest
1 Spray Oil; (Pam), as needed

Pre heat oven to 350 degrees. In a large bowl mix warm milk and juice. Soak
bread cubes in milk mixture. In a medium bowl combine eggs, sugar, vanilla,
nutmeg, salt and lemon zest. Add to bread mixture. Stir in pineapple,
dates, nuts and marmalade until combined with bread mixture and well
blended.

Spray large baking dish with Pam, pour bread mixture in dish. Set dish
inside a Bay Marie filled with hot water. Place Bay Marie into oven and
bake for 45 minutes to an hour. Remove from oven and allow to cool prior to
service.

NOTES : Serve with a great cup of coffee.
