“Hush puppies are a 2 t Salt
-cornmeal fritter, usually 3/4 c Milk
-deep-fried and served 2 lg Eggs, well beaten
With fried catfish or other 1 1/2 t Plus 1/4 cup vegetable oil
-fried fish. 2 md Onions, finely chopped
2 c Yellow cornmeal -(about 1 cup)
1 c All-purpose flour 1 ea Green bell pepper, cored,
3 T Sugar -seeded and finely chopped
2 t Baking powder -(1 cup)

Combine the cornmeal, flour, sugar, baking powder, and salt in a bowl
and stir until thoroughly blended. Make a well in the center of the
dry ingredients and add the milk, eggs and 1-1/2 tsp. of the oil.
Stir the dry ingredients into the wet ingredients until just
moistened. Add the onions and green peppers, and stir until just
blended. Pour the remaining 1/4 cup of vegetable oil into a large
skillet over medium heat. Using a Tablespoon, form the batter into
half-dollar-size cakes and fry, turning once, until golden brown on
both sides, about 5 minutes. Drain on paper towels. Makes 20 From:
