- 120 grams of all-purpose flour
- 120 grams sugar
- 8 large eggs, separate the yolks and whites
How To Make Biscuit De Savoie?
- Preheat oven to 210 °C and grease mini bundt cake molds.
- In a bain-marie, beat the yolks with the sugar using a whisk until it the temperature reaches 50°C/55°C.
- Remove from the heat and continue to beat with a whisk until it cools down.
- Beat the egg whites and add slowly add the sugar until still peaks are formed.
- Carefully incorporate the beaten yolks with the meringue, then add the flour in portions and fold into the batter.
- Fill the cake molds and bake for 8-10 minutes.
- Remove cakes from the oven and allow them to cool for 5 minutes before removing them from cake molds.
- Completely cool on wire rack.
